Pomegranate, Lime and Lemon Spritzer



This drink is probably much more suited for a hot summer's day, but even in the middle of winter, it was super delicious and very refreshing. The kids loved it, and it is a great replacement for my kids who sometimes feel left out that they can't have soda.

Pomegranate, Lime and Lemon Spritzer

2 pomegranates
2 limes
1 lemon
4 tablespoons agave syrup
1 large sprig of mint, leaves torn
1 bottle (1 L) sparkling water

Half fill a large jug with ice, then squeeze over the juice of the pomegranates, limes and lemons. To squeeze the juice from a pomegranate, cut in half horizontally, then squeeze really hard so that you are squeezing the juice out of the seeds. Add the agave syrup (or other sweetener, to taste) and the torn mint leaves. Top with sparking water and serve over more ice.

Note: I used 4 tablespoons of agave syrup because my pomegranates were unusually tart. Start with less and add to taste. If using another sweetener, like sugar, either use caster sugar, or dissolve it in an equal amount of boiling water first.
