Healthier Berry Mousse

I love mousse of any sort, but filled with eggs and cream, it is definitely not something that I should be eating on a regular basis. This mousse is (almost) as good as regular mousse, but much better for you.

Healthier Berry Mousse

300g frozen or fresh berries (any sort or mixture is fine)
1/2 cup water
1/2 cup sugar
1/2 cup boiling water
1 pkt Aeroplane jelly Create A Jelly (85g)
1 tin Light & Creamy low fat evaporated milk (310g), chilled

Heat half the berries (reserve the rest) with 1/2 cup water and the sugar over low heat. Stir until sugar is dissolved. Cool, then blend until smooth with a stick (handheld) blender.

Combine the boiling water and the jelly crystals in a heat proof bowl and stir until dissolved. Add berry mixture and stir to combine. Refrigerate for 1-2 hours until just beginning to set - it will look a bit like egg whites. Beat with electric beaters until thick and pale.

Beat the chilled evaporated milk until thick and fluffy (like whipped cream). Fold lightly into raspberry mixture. Spoon into glasses and refrigerate for at least 3o minutes. Top with reserved berries and a sprig of mint.
